A store computer
A regular Windows or Linux computer placed near your cameras and checkout. The easiest way for most stores to start.

Smart cameras
Some newer cameras can do part of the work on board, with a small computer in the store bringing the results together. This works on app-capable cameras from brands such as Axis and Hanwha.
